This is probably happening because the drop-down list uses an internal value for the Value and a different display name. Would it be possible for you to add a Lookup column to SharePoint? This should display the matching Display Name to the internal value. Hope this helps.

Yes all the UDCX files are on the same site, I can see them in the DataConnections Folder.

it seems changed from infopath 2007 version
in infopath 2007, in the properties windows of the image control i can flag the "allow the search for, removal and replacement of the images" properties and the image still be linked.
in infopath 2010 the same control always embed the file inside the xml
