Hello,
I'm relatively new to Infopath but so far i've picked it up fairly quickly.
However i'm now toying around with the merge data function and i'm having trouble designing a form that will specifically record merged data in the form that I desire.

Once the form is saved to the library, it is an XML file. You simply need to load the xml file from its saved location and then do whatever xml things you need to do with it.

You will need to build the body content yourself in code. That may not sound very pleasant if you have a lot of fields, but that is what you will need to do.

Try
IXMLDOMNodeList elemList = thisXDocument.DOM.selectNodes(''//my:field1'');
foreach(IXMLDOMNode elem in elemList)
{
string s = elem.text
// do something with elem content.
}

The best way is to reverse the changes you made to your form today until it
can be opened again. I hope that you have a backup of the form before you
made changes...just in case.
Good ...
