When you take the email dataconnection there will be an option to send the form inline or as an attachment. When you set it as an attachment then the form goes as an attachment.

I have a multiple view form that has had the security upped from Domain to Full trust - once it has been republished when it loads it does not display any of the view selections?

Yes it is possible to publish the form without opening the publishing wizard. You can write a deployement script and publish the form using command line.
