There might be an easier way but you could add column to your repeating table with a text box in it. Put your formula in the "value". That way each time you add a row you'll have a new calculation showing the mileage.

So you have a rule on the other fields that if the signature field is not empty they can't be changed? If that is the case add a button (name it Edit Form or something like that) set the action of the button to clear the signature. That will solve the signature issue and unlock the other cells for editing.

You could add a rule to each field that sets the signature field blank. For InfoPath 2010 go to the Properties tab and select Add Rule.
