Found it. :) Save your form as source files, and search manifest.xsf for allowCustomization. It is probably set to no. Change that to yes and save. Then right click manifest.xsf and select design to open in design mode, File > save as to pack those files back up as an XSN.

I would query for only the list items that matched on department, then have a second connection that only returned items where the department = default.... I think that might work. I'll try to modify the form I sent to take care of the first part of that, but it will be tomorrow afternoon before I have time. :)

Wow, I've never seen this. I use InfoPath 2013 and Outlook 2016, and I can include the active view from the form in an email, and the user can't edit the email... is this an email form? Or a regular form with an email submit connection? Can you attach a screenshot under the Options tab in a reply?

Yeah, you may need to just add the department field to the same place in the main data source - but how may items are in your SharePoint list? A lot? In which case it may be better to just query for the specific department to populate the order section, then have the same fields in another group (called options or something) and use another ...

I just didn't add those columns when I created my secondary data source. :)

And I just tried in my test form, adding the created date to my secondary data connection, drug the field onto the form and IP used a date time control - can you maybe attach a screenshot of what is happening when you try this?
-
I'm not sure what you mean.... why not just use calculated values, formatted as date time?

So - I have NO way to preview this to see if it works, but what I did was add default data, set the ID field based on a default value, then added a rule to the ID field to set the other values. But it may need some other tweaks to get it right. :)

Here's my form - take a look at the read view. I've got a form load rule to query the 2ds.

So - is the desired outcome that the form only have the items that match on department?
