I found the problem. For those of you who had or have a similar issue, my problem was that the SharePoint report server service was turned off. We were having other issues as well, like not being able to deploy reports, etc. Once this was corrected, I was able to update the InfoPath template.

Hi - how many columns are in the list? I've not run into limits before on setting field values, but it could be I've just worked with much smaller list forms.
