Hey Tom. This is standard InfoPath functionality - you just need to know how.
Open Data Connections and create a new submit to email connection. The wizard will lead you through it and you can use fields and formulas to populate the fields.
You can then add a rule to a button to submit to this dataconnection.

I think you are reffering to the footer. The header contains your column labels. The footer typically would have totals or sums. In properties you can check the box to display the footer. It is not there by default.

You would have to leverage how you control which view loads or create a field to track the current view. Then you would have to use rules to make sure the field was validated before submit or when data was entered into it. Probably both times just to be sure.

If they can be copied or even BCC'd then you could just concatenate each one with a ; inbetween using a formula. If they need a different email then you would need to create an email submit for each type. Another way to do this is use a code module ...

Good I am glad you are getting the hang of it.
You can submit your data back to the DB, with the stock InfoPath form. If you take your data fields and put them in a repeating table you will have the ability to insery new rows.

In the form you can use rules to set your query fields with the dropdown selection. In code you would probably use the OnChange. You need the trigger to occur and then the action is moving the current value from the Drop Down to the Query field and then also probably run your query so that the data updates all in one.
