Which version of InfoPath is this? Steps will vary...
The steps require extracting the template into its resource files, and looking at the manifest, so save a backup of your form before you begin.

I guess it's possible that the option is not available on IP 2003. I'm on IP 2010. I remember using this email option on IP 2007, but I don't remember whether it is available on IP2003, sorry.

Ok, I understand, so the scenario is:
* The XML form is actually being sent via email to the user, but
* the form has some data connection(s) that contact the server
When you walk thru the data connection wizard, to create the Send email data connection, you should see the option to send the active view only.

Email submit-type data connections allow you to either send the XML attached to the email, or sending the active view.
It sounds like what you want to do is only send the active view.
I don't understand what you mean by " It appears that when the emailed form is received, it pulls the template down from the SharePoint location". ...

Instead of using plain-text labels, use labels within a Calculated Value. Then you can use conditional formatting to hide/show the Calculated Value control.
Hope this helps!

This might be a common InfoPath error - I say that because it came up last week on another forum thread, and it happened to me a few weeks before that, and we have a blog post on it:

Dropdowns have a displayName and a value. When referring to a SharePoint list, the displayName is typically some human-readable field, and the value is typically the ID of the list item. This is especially important if you have lookups.
What you do is you have a second field in your schema (it could be hidden and not displayed in the canvas). ...

I haven't seen a solution other than editing the XSD.

I've never seen this error, so I would imagine that it's a problem with your form, your workflow, your form library, etc.
I would try a brand new form, a simple browser form, that submits to the form library, and that's it. Does it open in the browser correctly when you reopen the submitted form?
