Try by clearing the infopath cache and IE cache.
And if you are typing the the text in text box control, then delete the control and add the control again.

This sounds like an intresting issue. What version of Internet Explorer are you currently running and is this a clean install or have you upgraded IE? Also does this only happen on that particular machine?

I cannot say for certain, but since it is sold as a standalone product, I would imagine that it does not require Office to be installed.
If you look at the requirements for IP2007, it does not say anything about requiring Office:

Microsoft office (standard, professional) (2000, 2003) service pack (2,3)
I have yet to find the answer in the microsoft web site.
