I actually want to see all the added items in a list of some sort though, not just a delimited string. So I'd want to add them to a bulleted or numbered list or a repeating section. Can't figure out how to add another item to the list - I just keep over-writing the first item.

that's a tough requirement as InfoPath forms are electronic and should be used to AVOID printing. I would try to do everything you can to find out what the real requirement is and try to meet it without printing. In the end, if they have to be printed, it's not a logical expectation for it to act 100% like a Word doc with ...

Could explain in more detail what you mean?

Send it how? You just open the template locally, fill it out, save it as an XML file, and then email it? You didn't build this form template? It's not published anywhere? I don't understand how it's functioning.
Is everything you're doing just manual?
You don't have it set to automatically ...

If you can't use a multi-select list box, then maybe create a new text field plus a button. Have the user select the first item and press the button.
Button RuleSet 1:
Create a ruleset with a condition that checks to see if Field1 is blank
If so, set the value of Field1 to the value of the dropdown selection
Then, ...
