Open your XML in a text editor like Notepad. Toward the top you'll see an href attribute - that is the location of the template the XML will use to open with.

Make a backup copy of your form. Save your form as source files (Publish > Export as source files). Open manifest.xsf in a text editor - find and modify the UDCX location. Are you telling me you currently don't have a working copy of the template because the UDCX files were moved?
-
Open the template in design mode. Open the data connections dialog. Select the data connection you need to modify. Click the Modify button. Walk through the dialogs for the data connection - on the dialog where you select the fields returned by the data connection, you should also be able to indicate the sort field.

The problem is InfoPath offers no way out of the box to copy repeating data from one data source to another. Would it be acceptable to have all the contacts in a single field, delimited by a semi-colon or another separator? If so, search the forum for double eval - you could use a double eval formula to concatenate all the items together.

I don't believe the sort column info is stored in the UDCX - I think it is in the data connection information in the manifest for the template. You should be able to just open the form in design mode and walk through the data connection again - not sure what you mean by dev environment here - do you have InfoPath designer installed?

Hah - well I should have caught it prior to making you drag a bunch of debug stuff onto your form and PROVE that FirstName existed. :) Have a great weekend!

Okay, I just tested the command in your form - typed:
GetWeekDay /date=2011-02-04 /day=Mo
into the command field, tabbed out, and got:
2011-01-31 in the result.
Where are you trying to use the command?

Thanks - I grabbed the template and then removed it from you post. I don't need the other data connections. :)
