You should be able to use the addMinutes function to add 3 hrs to a datetime. Let me know if you need more info.

If you need the data promoted (i.e., showing in your form library) then you need it be a field in the form's data source. But you can have a field in the data source that doesn't show on the form. in the data source task pane, right click the group where you want the field, select Add, then add your field.
