Please try using All occurrences of <field> are not equal to "Global Functions".  The All occurrences option is available in a dropdown on the Select Field dialog.

So one of my testers found that they can enter the word hello in a date field. Is there a setting I should be selecting here that I possibly have not yet discovered?

When you click on the Add document link in the form library, or when you click on an existing XML, and the form opens in the browser, copy those URLs to Notepad.
