You can export the completed form as a .mht file by going to file -> export. This will be viewable like a web page, but read only.

as far is i know the .net framework has to be installed on every machine as well as infopath if you wanna use the forms created with infopath.

yes the displayed fields (status etc) are read only in sharepoint, so even if you try and change them in data grid mode (witch would be handy for changing multiple fields at the time as you request) you get an error.
I guess your suggestion would work, using Lists.asmx or a custom web service.

general question. for my project it is essential that users can fill out the form even offline. good thing is that infopath supports that option in general. unfortunately some information in the document come form querying ActiveDirectory or a web service is used as a secondary data source. these things won't work in offline status.
