Hello,
Yes you can disable any button using Conditional Formatting.
Double Click and open the properties and in Display tab select Conditional Formatting and set your conditions and then check the Check box Disable this Control.
This button will be disabled till your condition is met

In the topper left corner, there is a send-button in InfoPath. Can I disable these button, so that a user has to use my custom send-button?

I found the rules in the manifest. I hoped there is a way or tool to read out the manifest and display the rules in a clear way.

Select Date type from the data type in the Datepicker Properties instead of Date and time and then trying to not show the time from the format button.
