Hi - My first question here - I did not see this answer elsewhere.

Is there a way that I can view who signed a form in a Form Library Column. As it is now, I cannot tell a form has even been signed when I export out the information, much less who signed it.

I would appreciate any help on this.

Welcome to Infopathdev Forums.

Create a field in the form which populates the person's name when the form is signed and promote this field into sharepoint form library when publishing. You can put an OnAfterChange on this field so that when ever the new signature is added the field is updated.
