Hi,

 Is there a guide on how you deploy forms across multiple environments, DEV, UAT and PROD? If the forms have data connections to SharePoint Lists then it all falls apart when you move the form from 1 environment to another. If the fields have additional code utilising filters and fields to the data connection lists then this becomes corrupted when the form is moved.

 Any ideas would be really helpful

We just webinar'd this last month (youtube.com/Qdabra) and showed a form that has automatic fixups. So, you can publish it anywhere and it will auto-fix up the data connections on load. See the "Change URLs view" in the attached sample an read the explanation at the bottom.
