When I'm looking at the data source panel, I see the data structure and some of the groups look like open folders and some look like open folders with a little padlock on them.

What's the difference and how do I switch from one to the other?

The ones without the lock suggest that you can modify the datasource.You can also add or delete fields to it.
Observe the "Add" button below.It is enabled.You can select a group and add fields.

In case where there is a lock,the datasource cannot be modified.
