My Infopath textboxes keep a history of what has been previously entered into the textbox. How can one turn off this feature, 

That is the windows AutoComplete feature.

This is universal with Internet Explorer and InfoPath and other applications.

You can disable this but it will disable for all of them.

I believe in control panel or IE options you can configure the Autocomplete.

On a new desktop it will ask you once whether you want it enabled.
