Hopefully things won’t have to be configured in your forms too much differently for the migration. There is not a list of issues for moving from FormsViewer on prem to FormsViewer online - because, in general, if your form works with FormsViewer on-prem, it will with FormsViewer online.
Your data connections will change in the forms – you could either update them in InfoPath manually or use the Dynamic Data Connections XTP from training.
You may want to use Power Automate to replace any SharePoint 2013 workflows. As far as I know, we can still use SharePoint 2013 workflows in SharePoint online, but I sure wouldn’t rebuild anything in SharePoint Designer at this point. I’d use Power Automate Flows – I’d be concerned about Microsoft just turning off the SPD workflows at some point in the future when they decide to no longer support them.
But I think that would be about all you’d have to change – that is, you’ve already done the work to make your XSNs compatible with FormsViewer, so you shouldn’t have to do much more than set up the data connections. Oh, and on SharePoint Online, instead of using the JavaScript approach, you might want to use Modern views in your lists and libraries and configure FormsViewer extensions instead for opening submitted forms from their libraries.
