Is there a way to change the drop down list source between two different external lookup based on the value in a text box? For example let say a user types fruit in a text box and clicks out and now that drop down list shows Apple, Grape, Orange. The user then types Vegetable in that same text box and now the drop list shows Carrots, Peas, Broccoli.

No - it would be nice, right? Instead, use multiple drop down controls, each bound to the source you want, then use conditional formatting to display the one you want to use....

Ah man that sucks. I am sure I know the answer but is there a way to stack the controls on top of each other?

Well - no, but if you put them all in the same layout table cell, that should have the same effect. See attached sample - save locally, right click and select design, then preview.
