Hello Pinnacle7,
Date/Time calculations can get a bit tricky. the dateAdd function only does so much out of the box (OOB). I would recommend using qRules Date Diff command. This command will allow you to get the difference between two dates in whichever format you choose.
The syntax you would want in this instance would be: concat(" DateDiff /date1=", fieldwithStartDate, " /date2=", FieldWithResolvedDate, " /component=totalminutes")
Here's a link to qRules for some more info: http://www.qdabra.com/en/products/qRules_new.aspx
After that it would just be some testing and logic to break up your total minutes into days, hours and minutes.
Hope that helps!
