How I can set the people picker value through a workflow in the SharePoint 2010 Designer?
Should I use DisplayName, AccountID, AccountType

The problem is that the PeoplePicker doesn't know the email address. So, you need to query UserProfile service to get it... if your aim is to send email from the workflow.
If you're just doing assignment or removing permissions, you can get it from the last modified info.
