    Repeating Section with unbound items?

I have a form I'd like to put together for pickups that are used by drivers in my company. They go to pickup locations and can pickup between 1 and 7 or 8 items per stop. Due to regulatory restrictions, there needs to be a clear chain of custody for items picked up, and a record of when the items arrive at our location needs to be kept. The form they are currently using takes input and uses a Sharepoint Workflow to add an entry to a sharepoint list at each stop. At the delivery end, occasionaly they need to change containers for the picked up items. I can pullup a list of all stops with the picked up items for each driver using a filtered query, and I can populate the repeating sections binding them to the sharepoint list items. How can I have them edit the entries, or make changes to the items they picked up, using the form?

For instance a pickup entry would look like this in the list

    Plant - Driver - Time - item1 - item2 - item3 - modified(boolean) - newitem1 - newitem2 - newitem3

I thought about just using the item1/2/3 in the repeating section, and adding text boxes I can bind to to get the values to update the list item, except I can't figure out how to have these unbound items repeat per the number of pickup entries for the driver. A repeating section could show all the fields, including newitem1/2/3, but if a driver then changes item1, and puts a new containerID in newitem1, how do I update the sharepoint list to reflect this?

These forms are being used on iPads, so they need to be browser forms, with no custom coding. I'm sure there's a way to accomplish this, but I am stumped. Please let me know if anything isn't clear or if there is any further info I can provide to clarify what I am trying to do. Thanks in advance for any advice!

We are on Office365, Sharepoint 2013 Online, and I am designing the forms in infopath designer 2013.
