    What does shredding actually do?

Does shredding synchronize existing forms in a library with the newest template?  When should I shred documents?

Yes, shredding pushes the latest XML data in DBXL to both SQL and SharePoint, according to the mappings that have been set up in DBXL.

You should reshred whenever the mappings change, for example, columns added to the SQL mapping or a condition added to the ShP mapping.
