Here is my scenario: I have a form that is submitted to a SharePoint Form Library, but business requirements ask that after the form is submitted, it should not be able to be edited again (with possible exception of a certain admin group). I know that I could just do this in SP by setting up a group's permission to be read-only for this Form Library, but was wondering if it is possible in Infopath. If that is possible, is it additionally possible to allow editing of just one field but not any others after submission?

It should be possible via conditional formatting. You can disable certain fields.

You could also switch users to a read only view, based on a form value (such as my:Submitted = "TRUE").

If you need this behavior to change according to the currently logged in user, you'll need to keep track of the users and perhaps their groups.

Sadly, User Roles are not available in browser forms, so we must look for workarounds.

Microsoft documents a workaround by using a secondary XML file (http://blogs.msdn.com/b/infopath/archive/2007/01/10/implementing-roles-in-browser-forms.aspx)
