Newbie! how to integrate a simple infopath form into sharepoint!

I am an intern and I have been assigned a project where I need to create a form in InfoPath that will be sent through Outlook to new hires where they can fill out their name, department, educational back ground and career goals. Once they submit the form I would like for a copy of it to be sent to my email and also stored on Sharepoint. Is all of this possible or is there a better way to go about it? If it is possible what are the steps I should take, I am completely new to infopath and sharepoint. I have figured out how to create the form though.

As an alternative to emailing the actual form,  an easier to implement approach, would be to created the form, publish it to SharePoint, then just send a link to the form library with instructions. After the new employee fills out the form, use the Alert feature in Sharepoint to notify the correct people.
