I have a requirement to sort the files attached to a single file upload control in InfoPath 2010. The InfoPath template is associated with a list.

I don't think this is possible - this would require code and we can't have code in a list form - that said, you could look at the XSL and see if you can do something there - not sure if a list form will like XSL edits outside of the designer, but it may be worth a try.

How about keeping the InfoPath template in a Form Library instead of SharePoint lists? Will that work?

Well, if it were a full InfoPath form, you could add code that would:

1. Decode the file attachments and get the name of each
2. Copy the file attachment nodes
3. Sort the file attachment nodes
4. Delete the original nodes
5. Append the copied nodes

However, if you do this as the user is attaching the nodes, I'd think the user experience would be pretty poor - having things move around on you while you are filling out a form is kind of disconcerting - same with if you tried to address this in the XSL only. It is a requirement I'd probably push back on a bit, frankly.
