When setup email submit, the Introduction box for the email is text only. Is there any way we can put a field value or let the user modify the email massage when they submit the form to an email address?

AFAIK, there no out of the box way to modify this message at fill time. Perhaps there is a custom code solution where you can do this, but unfortunately I don't know of any off the top of my head.
