What version of InfoPath are you using?
The promoted property information is stored in the manifest.xsf file. If you save your form as source files and open manifest.xsf with a text editor, you'll find them toward the bottom of the file:
<xsf:listProperties>
<xsf:fields>
<xsf:field name="Job Name"....etc
You can access the manifest.xsf in code. In C# for 2007, you can use this.Template.Manifest.
