After much reading I found out the best way to do this was with a web service, so I spent the day learning and testing that out. I have a web service and a caml xml file that adds all rich text items from my form over to another list, and another web service and related caml file that updates rich text these items when the form updates. It worked in preview mode, now I'm just waiting for my admin to put my form on the site so I can really test it out! Whew, that was a lot of thinking and research just for something that should be built in!
