InfoPath Dev

I have a scenario where 90% of users are on our network and can enter details directly into a SharePoint list that lives on the intranet. The other 10% are in the field but still need to get data into the list. The tentative solution I've come up with is having them email a form, which then gets processed by someone on the network.

 I understand I'm crossing some products here (InfoPath, Office and MOSS) but am hoping someone knows how I can take InfoPath forms from Outlook and add them to a SharePoint library...
