Michal, you can - just make sure you go to the File->Form Options ->Compatability menu and choose your form type to be 2007.  This will help the compatability identify what features you have that are causing you problems.  This will probably take care of your second question around e-mail submittion. If your using Infopath 2010 you can hide the control and you don't have to use a section to do so.

There is no outlook on the PDA, just standard Windows Mobile 5 or 6.  We see the same behavior on Blackberry's and the Goodlink Service as well. So it's not just Active Sync with messaging.
