Ok looks like I found a workaround.... thought of it while driving back to work. Enable multi-value for the people picker fields in SharePoint list, and then load up and re-save the InfoPath forms. And all seems ok for now. I guess enabling multi-value make InfoPath forms expecting of having ";" in the fields as it's normally ...
