You are correct. You can use UDC Connections with the rich client. As a matter of fact, we are currently using them in our solution. The problem with UDC connections is that they take a while to load and if you have a bunch of different connection the user has to wait for each one to load. We were trying to find a way around this ...

We did not find a solution to this. We hope Microsoft modifies this in the next version. We could not use the Sharepoint object model to retrieve the data because the forms are Infopath client forms - not browser enabled (the forms must work in a disconnected state).
