I have not tried this but I thought it was possible to use promoted properties. Have you tried updating a seperate list via your form and a CAML?  That could be one work around.  Setup data connection to insert to a list that could be your trigger or workflow parameters.

Hey Joseph. I believe sorting must be done in code for exisitng data. Also I believe you would still need a seperate list for each so that each can be stored seperately.
