If the email originates from the client there may be a way to set the from within Outlook for the particular emails, but that may be a challenge. The only other option is to use server-side email.  Then you can specify the reply address. Server-side requires either IFS or webservices like in the Qdabra Database Accelerator Suite ...

Hi Alphamax,  We are having the same issue with our InfoPath 2003 forms.  Does anyone have a solution for this?  

The only other thing I can think of is that your web server is adding something. Have you tried a publishing a sample form to the web site and see what happens with it? To see if it is related to the location or the specific form?

Have you clicked the arrow at the bottom of the Tools list to make sure they are not hidden?(show all) You should have a forms options, submit options, and data connections in the list when in design mode.
