Wow, thanks Clay. You certainly pointed me in the right direction. Here is the actual string i used (turned out to be really easy):

Thank you very much, It works great.
It is much easier for end users to use access than changing XML in notepad.

You might have use for Qdabra's migration tool.
It can migrate templates and forms and keep them in sync.
-
InfoPath only works with the corresponding version of Outlook.
Here are your options.
Use code to send mail via SMTP.
Use server side email such as with MOSS and browser based forms or Qdabra's Web Services.

You should be able to do this in InfoPath and using formulas and tables.
To get an excel spreadsheet you would need to use frames and have the form and the spreadsheet next to each other or something.
-
Best practice is to create a submit data connection to the Sharepoint library and then have a button for submit or save.
You can enable a save button in form options under the browser tab I believe.

Create a new view in your form
Copy your entire view to the new view.
Go into view properties and set the view to read only.
Then go into form options and open rules and make a conditional rule.
If the last field is not blank
Switch to new view.
That way if a person tries to open a completed form they get the read only view.

There is a rule action to close a form. This is supported in browser forms too.

You can try to change the date within SharePoint.
Or you can use a setfield command on the dropdown to set it to substring-before(date, " ")
That should remove the time characters.
