If you do this just in the designer and not with code it should work like you want it to. Is there a specific reason you are doing it in code and not with the utilities provided in the IP designer?

I'm not sure why this isn't working, I've included default values for secondary data sources several times. What kind of secondary data source is it? An XML Document that is included in the form?

My guess is that this could probably be done, but I'm sure it will involve incredibly complex CAML commands. My suggestion would be to download the SharePoint SDK and spend a couple hours digging through the CAML documentation. Yes, you should be able to do this by simply adding another <Method> element with the appropriate fields. You should be able to add as many <Method> elements you like to add as many new items as you want.
