Are you the only one who has InfoPath 2010 on your computer?  If so, most likely that is why this is happening.  InfoPath related forms, tasks and workflows default to the client side application first.  If it can not find the client application (InfoPath) it uses SharePoint. Karsten, Using the workflow solution I was able to populate a Person data type field in SharePoint.  When the form is submitted it takes the assigned to field in the form and transfers that data to an assigned to field in the list.  WOOT! Thank you very much for pointing me in the right direction.
