I have the same problem sometimes! Close and re-open your form and normally that will work! But it's probably a bug of infopath!

Why you don't make a xml with your details fields and after bind it to infopath as a secondary datasource!
So you can link your textbox to this field make rules for define the value like you do with the field of the primary datasource and the secondary datasource is not send to your database!

If I have good understand you ^have save your form has xml et when you reopen this form another day you wan't that the date is automatically update? If yes you need to define a rule on the onload event of the form! For do this go on:
tools->form option->open and save and click on rules!
You can define the value of your field at today ...

Which processor svg do you use for make this? Have you try another?
You can use fo:external-graphic but your image need to be save on your computer or on the server It's depend where you make your transformation!

There is a way you can in properties of the control specify a default image!
So Make a jpeg with the text that you need and change specify this picture as default picture in the control poperties!
