Thanks Aruna, that was most helpfull, I wonder if there's a way to do this with individual workflows though. I will keep on looking as I don't want to take down all workflows while I perform updates.

You can use filter condition to filter your data.
Attached a sample template with two drop downs, and added a SQL data connection.

You can also enable/disable SharePoint Designer workflows from central admin site (you must be a member of the farm admin ShP group to perform this).
1. From Central Administration, click the Application Management > Workflow Management > Workflow Settings.

This is hard one as there are a million possiblities.
Initially check your data connection and make sure you didn't add your details as the default value when you set it up. This is easy to do as the wizard windows follow each other and are very similar.
Try that before I go into a major ramble!

I have managed to create my Equipement List based on the Norms.
Using Conditional Style, I hide the equipements I Don't want to show ;)
Now, gotta find out a good way to select them and store them.

There are a large number of ways to do this, the easiest probably being to to add a data connection recieving data from the list the form is hosted on and then adding a rule in the open and save rules section to switch views:
