Is there a way to control which fields are exported to Excel when using "Infopath actions/Export forms to Excel" from within an Infopath folder in Outlook? 

I don't believe CopyTable will work in a scenario with nested repeating data. You many need to use Insert instead and a counter for copying items in. Here's a document that may help you.  

  I just can't understand this.  My structure is - /my:myFields/my:GearSection/my:Section/my:Gear/my:PullSheet where my:Section is the repeating section, and my:PullSheet is the repeating table.  Whenever I add another section, and do a copy table, it only adds it to the table in the first section.
