I haven't tried it myself, but I've read that this requires setting up SMTP for SharePoint.

Problema resuelto, al final era un problema de configuracion de InfoPath 2007.
En Opciones de formulario -> Seguridad y confianza -> Hay que marcar Plena confianza.
Con esto me ha funcionado,
