I tested this on SharePoint online - the From address was [email protected]. I tested on an on-prem 2010 and the From address was a service account email that was used when outgoing email was configured in central admin. Infopath form is used in browser. But it is sending email from my outlook account not SharePoint account.

And this is in InfoPath filler, right? I've never heard of such a thing... I think I'd start by testing a brand new form. Just add an attachment control and publish to a test library. See what happens.

Will this form be used in the browser or in InfoPath Filler? In Filler, the email submit will use whoever submits as the "from" email - so you may want to just use workflow on the library it submits to instead. In the browser, I think it will use the email account that SharePoint is configured to send email from.
