Since the form is hosted in MOSS you can use SPD(SharePoint Designer) to build the strings you need in the any format you'd want the email in. You can do plain text or jazz it up with some HTML. Create a Work-flow then capture and do lookup to the fields you need for the current InfoPath form. You can send the email to any email ...
