You can attach an image by clicking on Options and Add File.
The InfoPath HTML doesn't always look perfect in WordML (which is what's used in Outlook). Are you using Outlook? What version?

Can someone help me map a people picker field that allows mulitple selections? I know if you are mapping a single people picker field you use concat("-1;#", AccountId) but I'm not sure what to do if you allow mulitple selections.

I believe I found my problem. I needed to follow some steps exactly when creating my formula. I was successful when adding all the text and fields at creation time.
