Activating the protectd mode in IE for intranet zone seems to solve my problem. Though, it is a globally impacting way.
It seems to be really linked to InfoPath, seems adding a mailto: link in a content editor webpart of SharePoint seems to work : there is a page refresh, but I come back to my original page.

The first thing I check on this is postback - your rule is on a button or a field - make sure either the button or the control bound to the field has postback set to always (under the control properties / browser tab).

Can you just hide the control if it is blank in your updated form? Will that work? You can also get the form's version via an expression like this:
substring-before(substring-after(/processing-instruction()[local-name(.) = "mso-infoPathSolution"], 'solutionVersion="'), '"')
