While attempting to do something similar with the data connection files from our testing to prod environments I noticed that when I uploaded the data connection files to prod if there were spaces in the file names they were replaced with underscores '_'. So I would imagine you could open up the Default Values dialog and remove some of the default lines. Is there something about that that's not working?

Why cant you use Created By field to send the Email to? I might be missing something here but wanted to know.

Just a quick follow up. It appears as though data is being sent to the web part automatically when the page loads even though the option to do so is not checked.
Any help would be greatly appreciated.

Works for me. Do this change in the form as well in the Submit Options. There is a section for After you Submit:.
