The problem here, and what I'm concerned about, is that an InfoPath query doesn't follow a view, it follows the list you're querying. So regardless of whether a view is showing only 100 items, if the entire list is 5000+ then my queries to it started failing. How do I query a list looking for something if that list has over 5000 items? ...

Actually, this issue was only present in an Infopath client form. Once I published it to SharePoint (web-enabled) the double commas disappeared. This was an acceptable solution for me as it was meant to be a web-enabled form.

I'm having a similar problem, but my workflow is what is causing the problem. I have an InfoPath form with a boolean true/false field. It defaults to false and is only ever modified by my workflow. I'm having this happen. Here's a screenshot. I'm using a People column in SharePoint for presence, then pulling it into a dropdown list via a data connection and displaying the "DisplayName" field.
